Manual camera controls hand you the decisions automatic mode makes on your behalf: exposure time (shutter speed), ISO (the sensor's sensitivity to light), white balance, focus distance and usually RAW capture.

What it is for shows in the scenes where automatic gets it wrong: on a snowy landscape auto exposure drags the frame toward grey, under stage lighting a performer's face blows out, and making flowing water look silky needs a long exposure. None of those are things automatic can know — they are intentions, and manual control is how you tell the camera yours.
